Description

Delicious apple streusel cookies topped with a sweet and crunchy streusel.


Ingredients

  • ½ cup brown sugar, packed
  • ¼ cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 ¼ cups all-purpose flour
  • ½ tsp baking soda
  • ½ tsp ground cinnamon
  • ¼ tsp salt
  • 1 cup finely diced apple, peeled if desired
  • ½ cup rolled oats
  • ¼ cup brown sugar, packed
  • ¼ cup flour
  • ¼ tsp cinnamon
  • 3 tbsp unsalted butter, melted
  • ¼ cup caramel sauce (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a mixing bowl, beat butter, brown sugar, and granulated sugar until light and fluffy. Add egg and vanilla, mixing until combined.
  3. In another bowl, whisk flour, baking soda, cinnamon, and salt. Gradually mix into wet ingredients. Fold in diced apples.
  4. In a small bowl, combine oats, brown sugar, flour, cinnamon, and melted butter to form streusel topping.
  5. Scoop cookie dough onto baking sheets (about 2 tbsp per cookie). Flatten slightly, then sprinkle with streusel topping.
  6. Bake 12–14 minutes, until edges are golden brown.
  7. Cool on a wire rack, then drizzle with caramel if desired.
