Ingredients

  • 3 cups all-purpose flour
  • 2 ¼ tsp instant yeast (1 packet)
  • ¼ cup sugar
  • ½ tsp salt
  • ¾ cup warm milk (110°F / 43°C)
  • ¼ cup unsalted butter (melted)
  • 1 large egg
  • 8 oz cream cheese (softened)
  • ¼ cup sugar
  • 1 tsp vanilla extract
  • 2 medium apples (peeled, diced)
  • 2 tbsp butter
  • 2 tbsp brown sugar
  • 1 tsp cinnamon
  • ½ cup flour
  • ¼ cup brown sugar
  • ¼ cup unsalted butter (cold, cubed)
  • ¼ cup chopped pecans or walnuts (optional)
  • 1 cup powdered sugar
  • 23 tbsp milk
  • ½ tsp vanilla extract

Instructions

  1. In a large bowl, mix flour, yeast, sugar, and salt.
  2. Add warm milk, melted butter, and egg. Mix until a dough forms.
  3. Knead for 6–8 minutes until smooth and elastic.
  4. Place in a greased bowl, cover, and let rise until doubled (about 1 hour).
  5. Beat cream cheese, sugar, and vanilla until smooth. Set aside.
  6. In a skillet, melt butter, then add apples, brown sugar, and cinnamon. Cook for 5 minutes until tender and caramelized. Cool slightly.
  7. Combine flour, brown sugar, and butter with fingers until crumbly. Stir in nuts if using.
  8. Punch down dough and divide into 10–12 pieces.
  9. Flatten each piece and place a spoonful of cheesecake filling and apples inside. Gather dough around filling and pinch to seal. Place seam-side down on a baking sheet. Top with crumble mixture.
  10. Preheat oven to 350°F (175°C). Bake buns for 22–25 minutes, until golden brown.
  11. Whisk powdered sugar, milk, and vanilla until smooth. Drizzle over warm buns.
