Description

A quick and easy recipe for delicious 5-Ingredient Beef Enchiladas that are perfect for a weeknight dinner.


Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 8 flour tortillas
  • 1 can (10 oz) enchilada sauce (red or green)
  • 2 cups shredded Mexican blend cheese (or cheddar/Monterey Jack)

Instructions

  1. In a skillet over medium heat, cook ground beef until browned.
  2. Drain excess grease.
  3. Stir in taco seasoning with ¼ cup water and cook for 2–3 minutes until well coated.
  4. Preheat oven to 375°F (190°C).
  5. Spread a thin layer of enchilada sauce in the bottom of a 9×13-inch baking dish.
  6. Place about 2–3 tbsp of beef mixture down the center of each tortilla.
  7. Sprinkle with a little cheese, then roll up tightly.
  8. Arrange tortillas seam-side down in the baking dish.
  9. Pour the remaining enchilada sauce evenly over the tortillas.
  10. Sprinkle with the rest of the cheese.
  11. Cover with foil and bake for 20 minutes.
  12. Remove foil and bake another 5–10 minutes, until cheese is melted and bubbly.
  13. Garnish with fresh cilantro, sour cream, or jalapeños if desired.
  14. Serve hot with rice, beans, or salad.

Notes

  • Feel free to customize the filling with beans or vegetables.
  • For a spicier version, add diced jalapeños to the beef mixture.
