A quick and easy recipe for delicious 5-Ingredient Beef Enchiladas that are perfect for a weeknight dinner.

- 1 lb ground beef
- 1 packet taco seasoning
- 8 flour tortillas
- 1 can (10 oz) enchilada sauce (red or green)
- 2 cups shredded Mexican blend cheese (or cheddar/Monterey Jack)
Instructions
- In a skillet over medium heat, cook ground beef until browned.
- Drain excess grease.
- Stir in taco seasoning with ¼ cup water and cook for 2–3 minutes until well coated.
- Preheat oven to 375°F (190°C).
- Spread a thin layer of enchilada sauce in the bottom of a 9×13-inch baking dish.
- Place about 2–3 tbsp of beef mixture down the center of each tortilla.
- Sprinkle with a little cheese, then roll up tightly.
- Arrange tortillas seam-side down in the baking dish.
- Pour the remaining enchilada sauce evenly over the tortillas.
- Sprinkle with the rest of the cheese.
- Cover with foil and bake for 20 minutes.
- Remove foil and bake another 5–10 minutes, until cheese is melted and bubbly.
- Garnish with fresh cilantro, sour cream, or jalapeños if desired.
- Serve hot with rice, beans, or salad.
Notes
- Feel free to customize the filling with beans or vegetables.
- For a spicier version, add diced jalapeños to the beef mixture.
