Instructions
- Make the Tart Shells: In a food processor, pulse flour, sugar, and salt. Add butter and pulse until crumbly. Add egg yolk and cold water gradually until dough comes together. Shape into a disc, wrap, and chill for 30 minutes. Preheat oven to 350°F (175°C). Roll out dough and press into mini tart pans. Prick bottoms with a fork, line with parchment, and fill with pie weights. Bake for 12 minutes, remove weights, and bake 5–7 minutes more until golden. Cool completely.
- Prepare the Filling: Spread a thin layer of caramel sauce on the cooled tart shells. Pipe or spoon pastry cream/vanilla custard on top, smoothing evenly.
- Create the 3D Flower Topping: For rose-style petals, arrange overlapping strawberry or peach slices in a circular pattern, starting from the outside and working inward until they form a rose. For a more playful style, use raspberries or cherries in the center as the “bud.”
- Decorate: Garnish with fresh mint leaves and edible flowers. Add a light drizzle of caramel over the fruit. Optionally, dust with edible silver or gold flakes for an elegant finish.
