Description

Delicious and fluffy pancakes made with mashed sweet potatoes.


Ingredients

  • 1 cup mashed sweet potato
  • 1 cup all-purpose flour
  • 1 tbsp sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp cinnamon
  • 1 egg
  • 3/4 cup milk
  • 1 tbsp melted butter

Instructions

  1. Mash the sweet potato until smooth and creamy.
  2. In a medium bowl, whisk together flour, sugar, baking powder, baking soda, salt, and cinnamon.
  3. In a large bowl, combine mashed sweet potato, egg, milk, and melted butter. Whisk until creamy.
  4. Pour the wet mixture into the dry ingredients and stir gently until just combined.
  5. Heat a non-stick skillet over medium heat and grease lightly.
  6. Ladle about 1/4 cup of batter onto the skillet for each pancake.
  7. Cook until bubbles form and edges look set (2-3 minutes), then flip and cook for another 2 minutes until golden brown.
